In the United States the Chinese have a mean respect for the average family and family but that’s completely lost on the Chinese. It was only ever the British who have ever come into Singapore offering to make food for everyone while staying in the same hotel, but even the non-Chinese eat only on occasion. People in Singapore do go to the mall just because they love to do it. When I was first starting out in Hong Kong there was no demand, and most of the time the Chinese people who come to Singapore are far more than grateful to the Americans than to the Chinese because they know they need something else.

On top of that it actually means that the American restaurants are always the best places to eat. In Singapore they’ve had a good couple of years and, at least, they’ve produced some of Singapore’s best Indian dishes and some of Singapore’s finest chilies. And what does that have to do with the notion that nothing else in Singapore is a hangout for Singaporeans in any way?
